Welcome

Why are you here? By the name of this blog, I’m hoping I have gained your interest, so I’ll start with why I am here 🙂

In Aug 2016, the hubs and I sold our house and packed up for a new mobile lifestyle in an RV! In our suburban pre-mobile life we had a huge kitchen (ideal for someone like me who loves to bake/cook) and we had our go-to places where we could easily find veg options in stores and restaurants. Within the first few months of this new lifestyle I pondered a few things:

  1. RVs = smaller cooking space and less storage space for groceries and cookware. Can I make this work?
  2. There are obviously SO many amazing places to eat across the country! Will we easily find places that serve veg-friendly food?

*Now, even if you aren’t a veg-head, stick with me here.*

With the experiences I’ve had (and will have) in this journey so far, good, bad, and ugly, I wanted to share what I have learned. This includes:

  • Awesome places to eat at across the country
  • Tips for cooking in small spaces
  • Taste-tests and recommendations of new veg products (we love to experiment!)
  • Our favorite RV meals

Now, if you haven’t already noticed, I love lists. My goal is to provide my messages in quick succinct list formats as much as possible. When I read articles, “5 Ways to Find Your Zen,” “Top 10 Dog Shaming Stories,” etc. I honestly skip over any paragraphs and go right to the bullet points. Maybe that’s lazy? I call it efficient 🙂 That being said, I want to congratulate you on reading this far… if it wasn’t my own blog, I probably wouldn’t have made it this far, so kudos, and thank you! In all truthfulness, I hope that this post is the longest and most drawn out post I ever have.

Final Notes:

  1. I’d say I’m a pretty happy and expressive person, so be prepared for lots of CAPITAL letters, !!!!!!, and 🙂 in my posts…it’s kinda my thing.
  2. I wanted to end with a note about my veganism. My decision to be vegan is about making a conscious effort to eat better for animals, for my health, and for the planet. Am I perfect? Absolutely not. And to me, to make an impact you don’t need to be. It’s about doing what you can. This will never be a preachy platform and all (seriously ALL) are welcome! So for anyone reading this, carnivore, omni, or bunny rabbit, I just want to share some ideas, experiences, and inspiration. I hope to learn for you all too!
